These cookies are fantastic and quick. They satisfy three cookie cravings in one. And, I have found, that if you use Agave as an alternative sweetener, the chewiness is enhanced and the taste is just as delicious!
1/2 cup raw sugar (OR 1/4 cup Agave)
1/3 cup brown sugar
1/2 cup butter, soft
1/2 teaspoon vanilla
1/2 cup peanut butter
1 egg
1 cup unbleached flour
1/2 cup oats
1 teaspoon salt
1 teaspoon baking soda
1 cup dark chocolate chips
Preheat oven to 350 degrees F.
Mix sugars, butter, peanut butter and vanilla in a large bowl with a hand mixer or stand mixer on low for 1-2 minutes. (Or by hand until butters, sugars and vanilla are creamed). Add in egg, soda and salt until combined. Add flour until combined. Mix in oats. Finally, gently blend in chocolate chips.
Scoop or roll into 1.5-2 inch balls onto cookie sheet, 2 inches apart. Press down center of cookie with a fork to flatten a bit. (They do not need to be completely flattened out)
Place in preheated oven for 10-11 minutes.
