This is my “no fail” pumpkin recipe.  Yum! It makes a LOT – 2 loaf pans.  So if you want less, cut the ingredients in half.  Make, bake, and smell autumn in your house.  Enjoy!

Note: this bread is not “super sweet”.  However, if you are using it for the pumpkin bread pudding recipe, no need to add sweetness!  If it is a stand alone and you want it for a dessert rather than a breakfast option (think yummy morning bread with butter!) add 1/2 cup brown sugar to the recipe.

3.5 cups all-purpose flour

2 teaspoons baking soda

2 teaspoons salt

1 teaspoon baking powder

1 teaspoon ground nutmeg

1 teaspoon ground allspice

1 teaspoon cinnamon

1/2 teaspoon ground cloves

2 cups raw sugar (or 1.5 cups agave)

1 cup coconut oil, melted

4 eggs, beaten

2 cups solid pack pumpkin puree

2/3 cup water

1) Preheat oven to 350 degrees F.  Grease two loaf pans.

2) In a medium mixing bowl, combine flour, baking soda, salt, baking powder, nutmeg, allspice, cinnamon and cloves.

3) In a large bowl with an electric mixer, blend sugar, oil, and eggs.  Stir in pumpkin.  Slowly blend the flour mixture into pumpkin mixture.  While blending the mixture add water incrementally.  Pour the batter into two prepared loaf pans.

4) Bake in preheated oven for 90 minutes.  Let bread cool for 10-15 minutes before serving.
